  • 10 oz Rotel (Canned Diced Tomatoes with Green Chilies) drained
  • 4 stalks Green Onions finely chopped
For the Creaminess
  • 1 cup Mayonnaise or Greek yogurt for a lighter twist
  • 1/2 cup Sour Cream can replace with more mayo or yogurt
  • 1 cup Shredded Cheddar Cheese pepper jack cheese can be used for extra heat

Step-by-Step Instructions
  1. Cook the pasta according to package instructions until al dente, approximately 8-10 minutes. Drain and rinse under cold water to stop cooking.
  2. In a large mixing bowl, combine the drained corn, Rotel, and green onions. Stir gently to mix.
  3. In a separate bowl, mix mayonnaise and sour cream until smooth. Pour over the corn mixture and stir gently.
  4. Fold in the shredded cheddar cheese until evenly distributed.
  5. Add cooled pasta to the mixture and stir gently to combine.
