  • 2 tablespoons vegetable or sesame oil for frying
For the Vegetables
  • 1 cup peas frozen peas recommended
  • 1 cup carrots diced finely
  • 1 cup corn fresh or frozen
For the Protein (Optional)
  • 2 large eggs or scrambled tofu for a vegan option
  • 1-2 cups cooked chicken, prawns, or pork optional for added protein

Method
 

Cooking Instructions
  1. If using fresh rice, cook 2 cups according to package instructions; spread on a baking sheet to cool for 10-15 minutes.
  2. Heat 2 tablespoons of vegetable or sesame oil in a skillet over medium-high heat until shimmering, about 1-2 minutes.
  3. Scramble 2 large eggs in the skillet until just set, about 1-2 minutes, then remove from skillet.
  4. Add 1 cup of chopped vegetables to the hot skillet and stir-fry for 3-5 minutes until tender yet crisp.
  5. Return cooled rice to the skillet with scrambled eggs and 2-3 tablespoons of soy sauce, and stir-fry for 3-4 minutes.
  6. Taste and adjust seasoning if necessary before serving hot.
