- If using fresh rice, cook 2 cups according to package instructions; spread on a baking sheet to cool for 10-15 minutes.
- Heat 2 tablespoons of vegetable or sesame oil in a skillet over medium-high heat until shimmering, about 1-2 minutes.
- Scramble 2 large eggs in the skillet until just set, about 1-2 minutes, then remove from skillet.
- Add 1 cup of chopped vegetables to the hot skillet and stir-fry for 3-5 minutes until tender yet crisp.
- Return cooled rice to the skillet with scrambled eggs and 2-3 tablespoons of soy sauce, and stir-fry for 3-4 minutes.
- Taste and adjust seasoning if necessary before serving hot.
