- Preheat your oven to 350°F (175°C) and coat a loaf or muffin pan with non-stick spray.
- In a large bowl, combine eggs, eggnog, spiced rum, sugar, vanilla extract, and softened butter; mix on medium speed until well blended, about 2-3 minutes.
- In a separate bowl, sift together flour, pudding mix, baking powder, salt, and nutmeg.
- Gradually add the dry mixture to the wet ingredients, folding gently until just combined; the batter should be thick and somewhat lumpy.
- Pour the batter into the prepared pan(s) and bake. Mini loaves take about 30 minutes, regular loaves 45-55 minutes, or until golden brown and a toothpick comes out clean.
- While the bread cools, prepare the glaze by whisking together confectioners' sugar, eggnog, rum, and nutmeg until smooth.
- Once bread is completely cooled, drizzle the glaze over the top and allow it to set before slicing.
