Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a loaf or muffin pan with non-stick spray.
  2. In a large bowl, combine eggs, eggnog, spiced rum, sugar, vanilla extract, and softened butter; mix on medium speed until well blended, about 2-3 minutes.
  3. In a separate bowl, sift together flour, pudding mix, baking powder, salt, and nutmeg.
  4. Gradually add the dry mixture to the wet ingredients, folding gently until just combined; the batter should be thick and somewhat lumpy.
  5. Pour the batter into the prepared pan(s) and bake. Mini loaves take about 30 minutes, regular loaves 45-55 minutes, or until golden brown and a toothpick comes out clean.
  6. While the bread cools, prepare the glaze by whisking together confectioners' sugar, eggnog, rum, and nutmeg until smooth.
  7. Once bread is completely cooled, drizzle the glaze over the top and allow it to set before slicing.
