Step-by-Step Instructions
  1. Begin by thinly slicing the red pepper and onion into bite-sized pieces, approximately 1/4-inch thick. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Once hot, add the sliced vegetables, seasoning with salt and pepper. Sauté for 5-7 minutes, until tender and slightly caramelized, then transfer to a bowl.
  2. While veggies are cooking, take three tortillas and carefully cut spooky face shapes. Aim for deeper cuts that will stand out but avoid tearing. Set these face-cut tortillas aside.
  3. On three plain tortillas, evenly distribute the sautéed veggies. Follow with generous sprinkles of shredded mozzarella and cheddar cheese, and add a spoonful of salsa if desired.
  4. Take the face-cut tortillas and gently place them on top of the filled tortillas to create the spooky quesadilla faces. Press down lightly to help the filling adhere.
  5. Heat a non-stick pan over medium heat and lightly spray or drizzle with oil. Place one assembled quesadilla in the pan. Cook for 7-10 minutes, until the bottom is golden brown and the cheese has melted.
  6. Once done, remove from the pan and cut into wedges for serving. Serve warm and enjoy these spooky snacks!
