- Begin by thinly slicing the red pepper and onion into bite-sized pieces, approximately 1/4-inch thick. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Once hot, add the sliced vegetables, seasoning with salt and pepper. Sauté for 5-7 minutes, until tender and slightly caramelized, then transfer to a bowl.
- While veggies are cooking, take three tortillas and carefully cut spooky face shapes. Aim for deeper cuts that will stand out but avoid tearing. Set these face-cut tortillas aside.
- On three plain tortillas, evenly distribute the sautéed veggies. Follow with generous sprinkles of shredded mozzarella and cheddar cheese, and add a spoonful of salsa if desired.
- Take the face-cut tortillas and gently place them on top of the filled tortillas to create the spooky quesadilla faces. Press down lightly to help the filling adhere.
