Chai Base
  • 2 cups Water
  • 2 tablespoons Black Tea Leaves (or Black Tea Bags) Assam or Darjeeling recommended
  • 2 tablespoons Brown Sugar Adjust to taste
Spices
  • 1 teaspoon Ground Cinnamon Freshly ground is best
  • 1/4 teaspoon Ground Cloves Use sparingly
  • 1 teaspoon Ground Ginger Fresh is recommended
  • 1 teaspoon Ground Cardamom
  • 1/4 teaspoon Ground Nutmeg Use sparingly
  • 1/8 teaspoon Ground Black Pepper Just a pinch
Creamy Touch
  • 1 cup Milk (or Plant-based Alternative) Almond or oat milk for dairy-free
  • 1 cup Heavy Cream Coconut cream as vegan option
  • 1-2 tablespoons Honey Or maple syrup as an alternative

Method
 

Chai Preparation
  1. Prepare the spice mix by finely combining ground cinnamon, cloves, ginger, cardamom, nutmeg, and black pepper in a small bowl. Reserve 1/4 teaspoon for whipped cream.
  2. In a saucepan, add 2 cups of water, black tea, brown sugar, and most of the spice mix. Heat until simmering, then stir in 1 cup of milk and steep for 5 minutes.
  3. Strain the chai into mugs using a fine-mesh strainer to remove tea leaves and spice residue.
  4. Whisk together heavy cream, honey, and reserved spice mix until soft peaks form. Use a hand whisk or electric mixer.
  5. Pour the chai into mugs and dollop with spiced whipped cream. Sprinkle with cinnamon or nutmeg before serving.
