Chai Preparation
- Prepare the spice mix by finely combining ground cinnamon, cloves, ginger, cardamom, nutmeg, and black pepper in a small bowl. Reserve 1/4 teaspoon for whipped cream.
- In a saucepan, add 2 cups of water, black tea, brown sugar, and most of the spice mix. Heat until simmering, then stir in 1 cup of milk and steep for 5 minutes.
- Strain the chai into mugs using a fine-mesh strainer to remove tea leaves and spice residue.
- Whisk together heavy cream, honey, and reserved spice mix until soft peaks form. Use a hand whisk or electric mixer.
- Pour the chai into mugs and dollop with spiced whipped cream. Sprinkle with cinnamon or nutmeg before serving.
