Prepare the Tart
- Combine the flour, confectioners' sugar, and salt. Mix in the butter until resembling coarse crumbs. Add egg yolk and cream, mix until dough forms. Chill for 1 hour.
- Roll out dough to an 11-inch circle, place into tart pan, trim excess, and poke bottom with fork. Chill for 20 minutes.
- Preheat oven to 350°F (175°C).
- Whisk lemon juice, zest, egg yolks, honey, and salt in saucepan. Cook until thickened at 165°F. Strain and whisk in butter.
- Pour lemon curd into the crust. Bake for 10-12 minutes until set. Cool on wire rack, then refrigerate.
- Puree blueberries, strain juice, and mix with honey and cornstarch. Cook until thickened. Cool slightly.
- Pour blueberry mixture over cooled lemon tart, spread evenly, and refrigerate for at least 2 hours.
- Slice and serve with whipped cream or fresh berries.
