Ingredients
  

For the Crust
  • 1/2 cup Unsalted Butter Chilled for better texture.
  • 1.5 cups All-Purpose Flour Forms the tart base.
  • 1/2 cup Confectioners' Sugar Can substitute with Sucanat or coconut sugar.
  • 1/4 teaspoon Kosher Salt No substitutions needed.
  • 1 large Egg Yolk Use large eggs for best results.
  • 2 tablespoons Heavy Cream Can swap with full-fat milk.
For the Lemon Curd
  • 1/2 cup Lemon Juice Fresh preferred.
  • 2 teaspoons Lemon Zest Fresh preferred.
  • 1/4 cup Honey Can replace with brown sugar.
For the Blueberry Filling
  • 2 cups Fresh Blueberries Frozen can be used if fresh aren't available.
  • 2 tablespoons Cornstarch Can use tapioca starch as gluten-free substitute.

Method
 

Prepare the Tart
  1. Combine the flour, confectioners' sugar, and salt. Mix in the butter until resembling coarse crumbs. Add egg yolk and cream, mix until dough forms. Chill for 1 hour.
  2. Roll out dough to an 11-inch circle, place into tart pan, trim excess, and poke bottom with fork. Chill for 20 minutes.
  3. Preheat oven to 350°F (175°C).
  4. Whisk lemon juice, zest, egg yolks, honey, and salt in saucepan. Cook until thickened at 165°F. Strain and whisk in butter.
  5. Pour lemon curd into the crust. Bake for 10-12 minutes until set. Cool on wire rack, then refrigerate.
  6. Puree blueberries, strain juice, and mix with honey and cornstarch. Cook until thickened. Cool slightly.
  7. Pour blueberry mixture over cooled lemon tart, spread evenly, and refrigerate for at least 2 hours.
  8. Slice and serve with whipped cream or fresh berries.
