Ingredients
  

For the Taco Shells
  • 4 pieces soft taco-size flour tortillas
  • 2 tablespoons granulated sugar for coating
  • 1 teaspoon ground cinnamon or pumpkin pie spice
  • 2 tablespoons unsalted butter melted
For the Cheesecake Filling
  • 8 ounces cream cheese room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream whipped
For the Strawberry Sauce
  • 2 cups fresh strawberries chopped
  • 1 tablespoon lemon juice or lime juice
  • 1 tablespoon cornstarch mixed with water

Method
 

Make the Taco Shells
  1. Preheat your oven to 375°F (190°C). Brush tortillas lightly with melted butter and sprinkle with a mix of sugar and cinnamon. Bake on a baking sheet for 8 to 10 minutes until golden and crispy. Let cool.
Prepare the Cheesecake Filling
  1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. In another bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
Create the Strawberry Sauce
  1. In a saucepan, combine strawberries, sugar, and lemon juice over medium heat. Cook for 5 to 7 minutes until softened. Mix cornstarch with water, stir into the strawberries and simmer for 2 to 3 minutes until thickened.
Assemble the Tacos
