Ingredients
  

For the Chicken
  • 1 pound Boneless Skinless Chicken Thighs Can substitute with chicken breast for a leaner option.
For the Marinade
  • 1/4 cup Soy Sauce Use low-sodium for a healthier option.
  • 2 tablespoons Brown Sugar Substitute with honey or maple syrup if desired.
  • 2 tablespoons Rice Vinegar Apple cider vinegar can be used as a substitute.
  • 1 tablespoon Cornstarch Arrowroot powder can also work.
  • 1 tablespoon Sesame Oil Olive oil can be a lighter alternative.
  • 1 tablespoon Ginger (grated) Fresh ginger is preferred.
  • 2 cloves Garlic (grated) Garlic powder can substitute, use less.
  • 1/2 teaspoon Pepper Both black or white pepper are suitable.
For Garnish
  • 2 tablespoons Green Onion Can substitute with chopped cilantro or parsley.
  • 1 tablespoon Sesame Seeds Can be omitted for a seed-free version.
For Skewering
  • 4 skewers Skewers Use metal or soaked wooden skewers.

Method
 

Prepare Marinade and Chicken
  1. In a large mixing bowl, combine soy sauce, brown sugar, rice vinegar, cornstarch, sesame oil, grated ginger, garlic, sesame seeds, and pepper. Whisk until brown sugar dissolves.
  2. Cut the chicken thighs into uniform cubes and add half of the marinade. Toss to coat and cover, marinating for at least 10 minutes.
Cook Skewers
  1. Pour remaining marinade into a saucepan and simmer for 3-4 minutes until it thickens slightly.
  2. Preheat air fryer to 400°F (200°C). Thread marinated chicken onto skewers, leaving space between pieces for cooking.
  3. Cook skewers in the air fryer for 10-12 minutes, flipping halfway through. Brush with glaze during the last few minutes.
  4. Remove skewers from air fryer, drizzle with remaining glaze, and garnish with green onions and sesame seeds.
