Prepare Marinade and Chicken
- In a large mixing bowl, combine soy sauce, brown sugar, rice vinegar, cornstarch, sesame oil, grated ginger, garlic, sesame seeds, and pepper. Whisk until brown sugar dissolves.
- Cut the chicken thighs into uniform cubes and add half of the marinade. Toss to coat and cover, marinating for at least 10 minutes.
Cook Skewers
- Pour remaining marinade into a saucepan and simmer for 3-4 minutes until it thickens slightly.
- Preheat air fryer to 400°F (200°C). Thread marinated chicken onto skewers, leaving space between pieces for cooking.
- Cook skewers in the air fryer for 10-12 minutes, flipping halfway through. Brush with glaze during the last few minutes.
- Remove skewers from air fryer, drizzle with remaining glaze, and garnish with green onions and sesame seeds.
