Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish with vegan butter or oil.
  2. Combine 1 tablespoon of ground flax seeds with 2.5 tablespoons of water, let it sit for 5 minutes to thicken.
  3. In a large bowl, mix together 2 cups of rolled oats, 0.5 cups of coconut sugar, 1 tablespoon of baking powder, 1 tablespoon of lime zest, and a pinch of salt.
  4. In another bowl, whisk together 1 cup of unsweetened almond milk, 0.5 cups of applesauce, 0.25 cups of melted vegan butter, 1 tablespoon of vanilla extract, and the prepared flax egg.
  5. Slice 2 to 3 semi-ripe peaches and toss with 1 tablespoon of coconut sugar and 1 tablespoon of lime juice. Layer the peaches on top of the prepared oatmeal batter.
  6. Bake the dish in the preheated oven for about 30 minutes, until the top is golden brown.
