  • 1 large Egg
  • 1 tablespoon Olive Oil

Preparation
  1. Begin by draining and rinsing one can of white beans. Mash them until smooth and creamy, about 2-3 minutes.
  2. In a large mixing bowl, combine mashed beans, all-purpose flour, egg, olive oil, salt, and pepper. Mix until a cohesive dough forms, about 5 minutes.
  3. Lightly flour your work surface and roll a portion of dough into a log about 1-inch thick. Cut into 1-inch pieces; optionally, roll on the tines of a fork for texture.
  4. Bring a large pot of salted water to a boil. Drop the gnocchi in batches; once they rise to the surface, let them cook for an additional 1-2 minutes. Drain them.
  5. Heat a tablespoon of olive oil in a skillet and sauté the gnocchi until golden and crispy, about 3-4 minutes.
  6. Plate the crispy gnocchi, drizzle with your choice of sauce, and sprinkle with fresh herbs.
