Preparation Steps
- Preheat your oven to 180°C (350°F) and line an 8x8 inch baking dish with parchment paper.
- Grate the zucchini and squeeze out moisture using a clean towel.
- In a large bowl, combine self-raising flour, salt, pepper, and chopped onion. Stir well.
- Fold in the grated cheddar cheese.
- Add the drained zucchini and fold gently until combined.
- In a separate bowl, beat the eggs with vegetable oil and chopped parsley.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Pour the batter into the prepared baking dish and smooth out the surface.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for about 10 minutes before slicing into squares.
- Serve warm or at room temperature.
