  • 2 cups Zucchini Grated and drained
  • 1 cup Self-Raising Flour Can substitute with gluten-free baking blend
  • 1 medium Onion Preferably caramelized
  • 1 cup Cheddar Cheese Can replace with mozzarella or feta
  • 3 large Eggs Acts as a binder
  • 1/4 cup Vegetable Oil For moisture
  • 1/4 cup Parsley Fresh, chopped; can swap with basil or thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Method
 

Preparation Steps
  1. Preheat your oven to 180°C (350°F) and line an 8x8 inch baking dish with parchment paper.
  2. Grate the zucchini and squeeze out moisture using a clean towel.
  3. In a large bowl, combine self-raising flour, salt, pepper, and chopped onion. Stir well.
  4. Fold in the grated cheddar cheese.
  5. Add the drained zucchini and fold gently until combined.
  6. In a separate bowl, beat the eggs with vegetable oil and chopped parsley.
  7. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  8. Pour the batter into the prepared baking dish and smooth out the surface.
  9. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  10. Cool in the pan for about 10 minutes before slicing into squares.
  11. Serve warm or at room temperature.
