Step‑by‑Step Instructions
  1. Heat the oil in a medium pot over medium heat. Add the ginger and garlic, sautéing for about 2 minutes.
  2. Increase heat to medium-high, add the ground beef, and cook for about 5 minutes until browned.
  3. Stir in the tomato paste and cook for 2 minutes to caramelize it.
  4. Pour in the chicken stock, add sugar, salt, ground white pepper, and white vinegar. Simmer for 10 minutes.
  5. Add the enoki mushrooms and scallion whites, simmer for an additional 15 minutes.
  6. Serve hot, garnished with scallion greens.
