Method

Step-by-Step Instructions
  1. Blend the Base: In a blender, combine Lifeway Raspberry Lowfat Kefir, vanilla protein powder, fresh or frozen raspberries, sweetener of your choice, and a pinch of salt. Blend on high for about 1-2 minutes until the mixture is completely smooth and creamy, with a vibrant raspberry color.
  2. Freeze the Mixture: Pour the blended mixture into a Ninja Creami pint, ensuring it's filled to the appropriate line. Freeze it upright for a minimum of 24 hours.
  3. First Processing: Once the pint is frozen solid, remove it from the freezer and insert it into the Ninja Creami machine. Set it to the 'Lite Ice Cream' function and process for about 2-3 minutes until the texture is creamy and fluffy.
  4. Add Mix-ins: Scrape down the sides of the pint, create a small hole in the center, then add the mashed raspberries, melted dark chocolate chips, and an additional tablespoon of kefir.
  5. Second Processing: Re-spin the mixture on the 'Mix-In' setting until all components are thoroughly blended, usually takes an additional 1-2 minutes.
  6. Serve or Store: Serve the Raspberry Dark Chocolate Kefir Protein Ice Cream immediately for a soft-serve texture or transfer it back to the freezer for firmer ice cream.
