Step-by-Step Instructions
  1. Preheat your air fryer to 180°C (356°F) or oven to 200°C (392°F). Peel and cube the potatoes.
  2. Drizzle cubed potatoes with olive oil and sprinkle with spice mix. Toss to coat.
  3. Roast the seasoned potatoes in the air fryer for 15 minutes or in the oven for 25 minutes, flipping halfway.
  4. While potatoes are roasting, wash and halve the tomatoes.
  5. In a serving bowl, combine roasted potatoes, halved tomatoes, mozzarella, and basil pesto.
  6. Season with salt and pepper to taste, mix gently, and serve warm.
