  • 2 pieces Boneless, skinless chicken breasts
  • 1 tablespoon Olive oil Can swap with canola or vegetable oil

  • to taste Pepper
For the Flatbread Base
  • 4 pieces Flatbread Store-bought or homemade
  • 1 cup Fresh basil pesto Homemade or store-bought
  • 1 cup Shredded mozzarella cheese Substitute with provolone if desired
For the Toppings
  • 1 cup Cherry tomatoes Halved; can use any type of tomato
  • 1/2 cup Grated Parmesan cheese Optional, for extra flavor
  • to taste Fresh basil leaves Optional garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather all your ingredients and prepare a baking sheet with parchment paper.
  2. Pat the chicken breasts dry and season both sides with salt and pepper. Let sit for a few minutes.
  3. Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes on each side until golden brown and fully cooked.
  4. On the baking sheet, spread a layer of pesto on each flatbread.
  5. Slice the chicken and distribute it over the flatbreads. Sprinkle mozzarella cheese on top and add halved cherry tomatoes.
  6. If using, sprinkle grated Parmesan cheese over the flatbreads.
  7. Bake in the preheated oven for 10-12 minutes until cheese is melted and bubbly. Broil for 1-2 minutes if desired for a crispy top.
  8. Remove from the oven, let cool briefly, slice, and garnish with fresh basil if desired. Serve warm.
