Step-by-Step Instructions for Pad See Ew
  1. In a mixing bowl, combine your thinly sliced beef with 2 tablespoons of Thai soy sauce, 1½ tablespoons of brown sugar, and 2 teaspoons of vegetable oil. Allow it to sit for at least 15 minutes.
  2. If using fresh wide flat rice noodles, gently unravel them or cook dried noodles according to the package instructions until just tender. Rinse under cold water.
  3. In a small bowl, whisk together 2 tablespoons of oyster sauce, 2 tablespoons of Thai black soy sauce, 1 tablespoon of fish sauce, and ½ teaspoon of brown sugar with 2 tablespoons of water.
  4. Heat 2 teaspoons of vegetable oil in a wok or a large skillet over medium-high heat. Cook the marinated beef for 1-2 minutes on each side until browned.
  5. Add minced garlic to the wok, sauté for about 30 seconds, then stir-fry sliced Chinese broccoli for 1-2 minutes.
  6. Push the sautéed veggies to the side, pour in the whisked eggs and scramble them until just set.
  7. Add cooked noodles to the wok, stir-fry for 30 seconds. Pour in the prepared sauce, mix everything together and add back the beef, broccoli, and eggs.
