For the Dressing
  • 1 cup nonfat Greek yogurt substitute with sour cream for a different tang
  • ¼ cup reduced fat mayonnaise for a lighter dressing, swap in more Greek yogurt
  • 2 tablespoons fresh dill, chopped fresh parsley or mint can also be delightful replacements
  • 2 tablespoons fresh parsley, chopped basil can give it an interesting twist
  • 1 tablespoon lemon juice vinegar can be a substitute for good acidity
  • 1 teaspoon onion powder you can use fresh shallots as an alternative
  • salt & pepper to taste
  • ½ teaspoon celery seed adds a unique flavor component; feel free to omit if not on hand

Step-by-Step Instructions
  1. In a medium bowl, whisk together the Greek yogurt, mayonnaise, and lemon juice until smooth and creamy. Add dill, parsley, onion powder, and season with salt and pepper to taste. Whisk until well combined, creating a luscious dressing.
  2. In a large mixing bowl, add diced chicken, feta cheese, celery, cucumbers, roasted red peppers, black olives, and red onions. Toss in the dressing, gently folding until well integrated.
  3. Taste your salad mixture and adjust seasoning as needed. Cover with plastic wrap or transfer to an airtight container. Refrigerate for at least one hour.
