Cooking Instructions
- Cook jasmine rice according to package directions, typically boiling with water for 15 minutes.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cube the extra firm tofu, coat with avocado oil, soy sauce, and cornstarch in a bowl.
- Spread tofu on baking sheet and bake for 20 minutes, tossing halfway through.
- Sauté shallot, ginger, and garlic in a pan with remaining avocado oil for 1-2 minutes.
- Add coconut milk, soy sauce, maple syrup, and paprika to the pan, simmering for 3-5 minutes.
- Fold baked tofu into the sauce and squeeze lime juice over it, cooking for another minute.
- Serve jasmine rice topped with Coconut Lime Tofu and garnish with cilantro.
