  • 14 oz Extra Firm Tofu Ensure it’s well-pressed for maximum crispiness.
For the Sauce
  • 1 tbsp Avocado Oil Or use Olive Oil; any neutral oil works.
  • 2 tbsp Soy Sauce Use tamari for a gluten-free version.
  • 1 tbsp Cornstarch Can substitute with arrowroot powder.
  • 1 small Shallot Substitute with onions if preferred.
  • 1 tbsp Fresh Ginger Dried ginger can be used in a pinch.
  • 2 cloves Garlic Garlic powder is an acceptable substitute.
  • 1 cup Coconut Milk Opt for full-fat for the best texture.
  • 2 tbsp Maple Syrup Honey is a great option for non-vegans.
  • 1 tsp Paprika Consider smoked paprika for a deeper flavor.
  • 2 pcs Limes Freshly juiced for acidity.
  • 0.25 cup Cilantro Feel free to replace with parsley or omit.

Method
 

Cooking Instructions
  1. Cook jasmine rice according to package directions, typically boiling with water for 15 minutes.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Cube the extra firm tofu, coat with avocado oil, soy sauce, and cornstarch in a bowl.
  4. Spread tofu on baking sheet and bake for 20 minutes, tossing halfway through.
  5. Sauté shallot, ginger, and garlic in a pan with remaining avocado oil for 1-2 minutes.
  6. Add coconut milk, soy sauce, maple syrup, and paprika to the pan, simmering for 3-5 minutes.
  7. Fold baked tofu into the sauce and squeeze lime juice over it, cooking for another minute.
  8. Serve jasmine rice topped with Coconut Lime Tofu and garnish with cilantro.
