  • 1 teaspoon Cinnamon the star of the show
  • 0.5 cup Milk or almond milk for dairy-free option
For the Cinnamon Swirl Mixture
  • 0.5 cup Granulated Sugar
  • 1 tablespoon Cinnamon
For Topping (Optional)
  • 0.25 cup Brown Sugar
  • 1 teaspoon Cinnamon

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Mash 2-3 very ripe bananas in a large mixing bowl and combine with sugars and butter.
  3. Add eggs and vanilla extract, mixing until well combined.
  4. Sift in flour, baking soda, salt, and cinnamon, folding gently until just combined.
  5. Pour in milk and achieve a smooth batter consistency.
  6. In a separate bowl, mix granulated sugar and cinnamon for the swirl.
  7. Layer half of the batter in the pan, sprinkle half of the cinnamon-sugar mixture, then add remaining batter and top with the rest of the swirl mixture.
  8. If desired, mix brown sugar and cinnamon for topping and sprinkle on top before baking.
  9. Bake for 50-55 minutes or until a toothpick comes out clean. Cover loosely with foil if browning too quickly.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling.
