  • 1 teaspoon Dried Oregano can substitute with Italian seasoning blend
  • 1 teaspoon Dried Basil fresh basil is more potent
  • to taste teaspoon Salt & Black Pepper adjust to personal taste
  • 2 tablespoons Olive Oil can also use avocado oil
  • 1 cup Marinara Sauce homemade or store-bought

Method
 

Step-by-Step Instructions for Chicken Zucchini Bake
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat. Brown cubed chicken for 5-7 minutes until golden, then remove from heat.
  3. Combine sliced zucchinis and bell peppers with garlic powder, onion powder, dried oregano, basil, salt, and pepper. Toss with remaining olive oil.
  4. Layer half of the seasoned vegetable mixture in the bottom of a baking dish.
  5. Top with browned chicken and spoon marinara sauce over it.
  6. Layer remaining vegetables on top of the chicken and marinara.
  7. Sprinkle mozzarella and Parmesan cheese on top.
  8. Cover the dish with aluminum foil and bake for 20 minutes, uncovering for an additional 10-15 minutes until cheese is golden.
  9. Let the bake rest for 5 minutes before serving.
