  • 2 cups sliced mushrooms button or shiitake
  • 1 medium onion thinly sliced; Vidalia or red for sweetness
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced; fresh is best
  • 2 tablespoons vegetable oil or canola/peanut oil
  • 1 tablespoon soy sauce or tamari/coconut aminos for gluten-free
  • 1 tablespoon oyster sauce or vegan alternative
  • 1 teaspoon sesame oil optional
  • salt to taste
  • pepper to taste

Method
 

Step-by-Step Instructions
  1. Wash broccoli and cut into bite-sized florets. Slice mushrooms and onions thinly. Mince garlic and ginger.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat until shimmering.
  3. Add minced garlic and ginger to the skillet; sauté for about 30 seconds until fragrant.
  4. Add thinly sliced onions; sauté for 2-3 minutes until translucent and soft.
  5. Toss in sliced mushrooms and cook for 3-4 minutes until tender.
  6. Mix in broccoli florets; stir-fry for 5-6 minutes until bright green and crisp-tender.
  7. Pour in soy sauce and oyster sauce; stir to coat vegetables and cook for another 1-2 minutes.
  8. Drizzle sesame oil over the stir fry; stir well and cook for an additional minute.
  9. Adjust seasoning with salt and pepper to taste.
  10. Garnish with sliced green onions and sesame seeds before serving.
