Preparation Steps
- Rinse 1 cup of fresh blueberries under cold water in a colander. Gently shake off excess water and pat them dry with a clean kitchen towel.
- Slice 2 ripe peaches into thin wedges. Place the peach slices in a large mixing bowl along with the rinsed blueberries.
- Crumble about ½ cup of feta cheese over the fruit mixture in the bowl.
- Wash and dry 4 cups of mixed greens. Gently add the greens to the bowl.
- Chop ¼ cup of red onion into small pieces and sprinkle it over the salad.
- Roughly chop ¼ cup of walnuts and scatter them on top of the salad.
- In a separate bowl, whisk together 2 tablespoons of honey, 3 tablespoons of balsamic vinegar, and 3 tablespoons of olive oil. Add a pinch of black pepper and salt to taste.
- Drizzle the prepared dressing over your Blueberry Peach Feta Salad and gently toss all the ingredients together.
- Taste the salad and adjust the seasoning with additional salt or black pepper if desired.
- Serve immediately, or cover and refrigerate for up to an hour if you prefer it chilled.
