For the Dressing
  • 2 tablespoons Honey Maple syrup is a great vegan alternative.
  • 3 tablespoons Balsamic Vinegar Apple cider vinegar is a suitable substitute.
  • 3 tablespoons Olive Oil Avocado oil can create a different flavor profile.
  • Black Pepper & Salt Adjust to taste for best experience.

Method
 

Preparation Steps
  1. Rinse 1 cup of fresh blueberries under cold water in a colander. Gently shake off excess water and pat them dry with a clean kitchen towel.
  2. Slice 2 ripe peaches into thin wedges. Place the peach slices in a large mixing bowl along with the rinsed blueberries.
  3. Crumble about ½ cup of feta cheese over the fruit mixture in the bowl.
  4. Wash and dry 4 cups of mixed greens. Gently add the greens to the bowl.
  5. Chop ¼ cup of red onion into small pieces and sprinkle it over the salad.
  6. Roughly chop ¼ cup of walnuts and scatter them on top of the salad.
  7. In a separate bowl, whisk together 2 tablespoons of honey, 3 tablespoons of balsamic vinegar, and 3 tablespoons of olive oil. Add a pinch of black pepper and salt to taste.
  8. Drizzle the prepared dressing over your Blueberry Peach Feta Salad and gently toss all the ingredients together.
  9. Taste the salad and adjust the seasoning with additional salt or black pepper if desired.
  10. Serve immediately, or cover and refrigerate for up to an hour if you prefer it chilled.
