  2. Prepare the Filling: Blend room temperature cream cheese until smooth. Gradually mix in granulated sugar and fine sea salt. Add vanilla extract, pistachio butter, and sour cream, blending until smooth.
  3. Incorporate Eggs: With food processor running on low, add the eggs one at a time and mix until just combined. If using, fold in lemon zest.
  4. Bake Cheesecake: Pour filling into cooled crust and spread evenly. Create a water bath to prevent cracking. Bake at 325°F for approximately 50 minutes, until edges are set.
