Ingredients
  

For the Crust
  • 1 1/4 cups unsalted butter melted
  • 1 cups quick oats can substitute with gluten-free oats
  • 1 cups all-purpose flour can substitute with gluten-free flour blend
  • 1 cups packed brown sugar soft for easy mixing
For the Caramel Filling
  • 1/4 cups butter for caramel
  • 1 cups packed brown sugar
  • 1/2 cups milk can substitute with dairy-free milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon flour can substitute with cornstarch for thickening

Method
 

Preparation
  1. Melt 1 ¼ cups of unsalted butter in a microwave-safe bowl.
  2. Combine melted butter with 1 cup of quick oats, 1 cup of all-purpose flour, and 1 cup of packed brown sugar in a large bowl.
  3. Press two-thirds of the dough into the bottom of a greased 9x13 inch baking pan and bake at 325°F for 10 minutes.
  4. Melt ¼ cup of butter in a saucepan over medium heat, add 1 cup of packed brown sugar, and stir until dissolved.
  5. Incorporate ½ cup of milk and combine until creamy.
  6. Bring the caramel mixture to a gentle boil and stir continuously for about 3 minutes until thickened.
  7. Remove the crust from the oven, pour the caramel filling over it, and sprinkle the reserved crust mixture on top.
  8. Bake the assembled bars at 300°F for an additional 20 minutes.
  9. Cool completely in the pan for about 30 minutes before cutting into squares.
