Ingredients

For the Brownies
  • 1 cup Unsalted Butter Substitution: Can use salted butter but reduce added salt.
  • 8 oz Semi-Sweet Chocolate Baking Bar Avoid chocolate chips as they contain stabilizers.
  • 1 cup Granulated Sugar No substitutions needed.
  • 1/2 cup Light Brown Sugar Can substitute with dark brown sugar for a richer taste.
  • 1 tbsp Vanilla Extract Use pure vanilla for best flavor.
  • 2 large Large Eggs Optional: Use egg replacer for a vegan version.
  • 1/2 cup All-Purpose Flour Substitution: Use gluten-free flour blend for a gluten-free version.
  • 1/3 cup Natural Unsweetened Cocoa Powder No substitutes necessary, but Dutch-processed cocoa can be used for a milder flavor.
  • 1 tsp Espresso Powder Can be omitted if not available.
  • 1/4 tsp Fine Sea Salt Essential for taste; skip only if necessary.
For the Whipped Ganache
  • 1 cup Heavy Cream No substitutions recommended.
  • 8 oz Semi-Sweet Chocolate Baking Bar (for ganache) Use the same chocolate as in the brownies for consistency.

Equipment

  • 8-inch baking pan
  • Microwave-safe bowl
  • Spatula
  • Whisk
  • Piping bag
  • Electric mixer

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8"x8" baking pan with parchment paper.
  2. Melt semi-sweet chocolate baking bar and unsalted butter in a microwave-safe bowl in 15-second intervals until smooth.
  3. Whisk in granulated sugar and light brown sugar, then mix in vanilla extract and large eggs until well combined.
  4. Sift in all-purpose flour, cocoa powder, espresso powder, and sea salt, folding gently until just combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes until the top is shiny and a toothpick comes out with a few moist crumbs.
  6. Cool the brownies in the pan for 15 minutes before transferring to a wire rack to cool completely.
  7. Heat heavy cream until simmering; pour over chopped semi-sweet chocolate and let sit for 2 minutes before stirring until smooth.
  8. Once cool, whip the ganache with an electric mixer until light and fluffy, about 2-3 minutes.
  9. Pipe ganache onto each round brownie bite for a beautiful presentation.
