  • 4 large eggs can substitute with scrambled tofu for a vegan option
  • 2 cups hash browns can substitute with sautéed mushrooms
  • 1 cup cheese can opt for reduced-fat cheese
  • 1 cup protein (sausage or bacon) can substitute with turkey sausage or omit for vegetarian versions
  • 1 cup fresh vegetables (spinach, bell peppers) leftover roasted veggies can also be used
For the Wrap
  • 4 large tortillas use whole wheat or corn tortillas, warm before filling

Method
 

Preparation Steps
  1. Heat a non-stick skillet over medium heat for about 2 minutes. Add a pat of butter, allowing it to melt and lightly bubble.
  2. Whisk together the eggs in a bowl until combined, then pour them into the skillet. Stir gently for 2-3 minutes until the eggs are fluffy and just set but still slightly creamy, then remove from heat.
  3. In the same skillet, add frozen hash browns and cook for 4-5 minutes per side until golden and crispy, flipping halfway through. Add sausage or meat during the last 3 minutes to warm.
  4. Lay a warm tortilla flat. On one side, layer crispy hash browns, fluffy scrambled eggs, meat if using, and sprinkle with cheese, leaving space for folding.
  5. Fold the sides of the tortilla inward over the filling. Then roll the tortilla tightly forward to encase the filling securely.
  6. Return the skillet to medium heat and place the wraps seam-side down. Toast for about 2-3 minutes until golden brown, then flip and toast the other side for another 2 minutes.
  7. Allow the wraps to rest for about 1-2 minutes after toasting, then cut in half or serve whole.
