Preparation Steps
- Heat a non-stick skillet over medium heat for about 2 minutes. Add a pat of butter, allowing it to melt and lightly bubble.
- Whisk together the eggs in a bowl until combined, then pour them into the skillet. Stir gently for 2-3 minutes until the eggs are fluffy and just set but still slightly creamy, then remove from heat.
- In the same skillet, add frozen hash browns and cook for 4-5 minutes per side until golden and crispy, flipping halfway through. Add sausage or meat during the last 3 minutes to warm.
- Lay a warm tortilla flat. On one side, layer crispy hash browns, fluffy scrambled eggs, meat if using, and sprinkle with cheese, leaving space for folding.
- Fold the sides of the tortilla inward over the filling. Then roll the tortilla tightly forward to encase the filling securely.
- Return the skillet to medium heat and place the wraps seam-side down. Toast for about 2-3 minutes until golden brown, then flip and toast the other side for another 2 minutes.
- Allow the wraps to rest for about 1-2 minutes after toasting, then cut in half or serve whole.
