Method

Step-by-Step Instructions
  1. Start by cutting the bacon into bite-sized pieces; freezing it for about 15 minutes will make slicing easier. Heat a large skillet over medium heat, then add the bacon. Allow it to cook for about 5-7 minutes until the pieces are sizzling and just starting to become crispy.
  2. While the bacon cooks, dice the small golden potatoes into uniform, medium-sized pieces. To prevent browning, soak them in cold water for about 15 minutes. After soaking, drain and dry the potatoes thoroughly with a kitchen towel.
  3. Once the bacon is crisp, remove it from the skillet and set it aside. Add a splash of olive oil to the skillet and heat it over medium-high. Add the dried potatoes, along with a sprinkle of salt, pepper, and Old Bay seasoning. Sauté for about 10 minutes, stirring frequently until the potatoes start turning golden brown and crisp.
  4. After the potatoes achieve a nice golden exterior, stir in the cooked bacon. Continue cooking for another 4-5 minutes, stirring occasionally.
  5. Lower the heat slightly and add the minced garlic to the skillet. Cook for about 2 minutes until the garlic becomes fragrant.
  6. Drizzle pure maple syrup over the potato and bacon mixture. Toss everything gently to combine, and allow it to cook for an additional minute.
  7. Finally, taste your Bangin’ Breakfast Potatoes and adjust the seasoning as needed. Transfer to a serving dish and garnish with freshly chopped parsley or chives. Serve hot.
