- Start by cutting the bacon into bite-sized pieces; freezing it for about 15 minutes will make slicing easier. Heat a large skillet over medium heat, then add the bacon. Allow it to cook for about 5-7 minutes until the pieces are sizzling and just starting to become crispy.
- While the bacon cooks, dice the small golden potatoes into uniform, medium-sized pieces. To prevent browning, soak them in cold water for about 15 minutes. After soaking, drain and dry the potatoes thoroughly with a kitchen towel.
- Once the bacon is crisp, remove it from the skillet and set it aside. Add a splash of olive oil to the skillet and heat it over medium-high. Add the dried potatoes, along with a sprinkle of salt, pepper, and Old Bay seasoning. Sauté for about 10 minutes, stirring frequently until the potatoes start turning golden brown and crisp.
- After the potatoes achieve a nice golden exterior, stir in the cooked bacon. Continue cooking for another 4-5 minutes, stirring occasionally.
