Step-by-Step Instructions
  1. Heat about ½ inch of vegetable or canola oil in a deep saucepan over medium heat until it reaches 350°F.
  2. In a large mixing bowl, combine shredded chicken, cream cheese, spinach, Colby Jack cheese, salsa, and sour cream. Season with salt and pepper, then mix until well-combined.
  3. Lay a tortilla flat, scoop a few tablespoons of filling into the center, and roll it tightly around the filling.
  4. Gently place the rolled taquitos seam-side down into the hot oil and fry for 2-3 minutes until golden brown; then flip and fry the other side.
  5. Remove the fried taquitos and place them on a paper towel-lined plate to drain excess oil. Serve them warm with toppings like salsa or guacamole.
  6. Continue frying the remaining tortillas and filling in batches, adjusting oil temperature as necessary.
