Ingredients
  

For the Patties
  • 1 can Sardines Or anchovies/canned tuna as substitutes.
  • 2 large Eggs Beaten.
  • 1 cup Breadcrumbs Any type, including gluten-free.
  • 1 cup Vegetables Chopped onions, bell peppers, or leftovers.
  • to taste Seasonings Salt, pepper, herbs.
For Frying
  • 2 tablespoons Oil Vegetable or olive oil.

Method
 

Instructions
  1. In a medium bowl, combine the drained sardines, beaten eggs, breadcrumbs, chopped vegetables, and seasonings. Mix until a soft, sticky dough forms.
  2. Divide the mixture into 2 or 3 equal portions and shape into patties about 1 inch thick.
  3. Create a deep well in the center of each patty to hold the egg yolk.
  4. Chill the patties in the refrigerator for 10-15 minutes.
  5. Carefully place one egg yolk into each well of the chilled patties.
  6. Heat about 2 tablespoons of oil in a skillet over medium heat.
  7. Gently place the patties yolk-side up in the skillet, cover, and cook for 6-8 minutes until crispy.
  8. Remove the patties from the skillet and serve immediately while warm.
