- In a non-stick pan, heat sesame oil over medium heat. Sauté minced ginger, garlic, and chopped green onions for about 2 minutes. Add spinach and stir until wilted. Include beaten eggs and scramble for 3-5 minutes. Mix in rice vinegar and coconut aminos.
- Fill a shallow dish with warm water. Dip rice paper in water for 20-30 seconds. Place on plate, scoop ¼ cup of egg mixture onto center, fold bottom up, tuck in sides, and roll tightly.
- Heat avocado oil in a non-stick frying pan over medium-high heat. Place wraps seam side down and fry for 2-3 minutes until golden brown. Flip and cook for another 1-2 minutes.
- Transfer wraps to serving plate and serve hot with dipping sauces like sweet chili or soy sauce.
