Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate 2-3 medium-sized zucchinis and sprinkle with salt. Let sit for 10 minutes.
- Squeeze the grated zucchini with a kitchen towel to remove excess moisture.
- Combine the squeezed zucchini with breadcrumbs, feta cheese, Parmesan cheese, egg, garlic, oregano, black pepper, and red pepper flakes in a mixing bowl.
- Shape the mixture into small tots, about 1-2 inches in diameter, and place on the baking sheet.
- Lightly spray or drizzle the tops with olive oil.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Allow to cool on the baking sheet for a few minutes before serving.
