Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Chop fresh broccoli into small florets and steam for 4-5 minutes until bright green and fork-tender.
  3. Finely chop the steamed broccoli and combine it in a mixing bowl with cheddar cheese, eggs, almond meal, and minced garlic.
  4. Mold about a tablespoon of the mixture into small tot shapes and place them on the baking sheet.
  5. Lightly spray the formed tots with cooking oil for extra crispiness if desired.
  6. Bake the tots for 20 minutes until golden brown and crispy on the outside.
  7. Let the tots cool slightly before serving, ideally with a dip like yogurt or hummus.
