Ingredients
  

For the Cauliflower
  • 1 head Cauliflower Cut into bite-sized florets
  • 2 tablespoons Olive Oil Can use avocado oil if preferred
For the Beef Mixture
  • 1 pound Ground Beef 85% lean, can substitute with ground turkey or plant-based grounds
  • 2 tablespoons Chile Powder Adjust to taste
  • 2 tablespoons Lime Juice Freshly squeezed
  • 3 cloves Garlic Minced
  • 1 medium Onion Chopped, yellow or red preferred

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into bite-sized florets, then toss with olive oil, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 20-25 minutes, stirring halfway.
  4. Heat a tablespoon of olive oil in a skillet and sauté the chopped onion for 3-4 minutes.
  5. Stir in the minced garlic and cook for 30 seconds.
  6. Add the ground beef, cooking until fully browned, around 6-8 minutes.
  7. Stir in chile powder, smoked paprika, ground cumin, and cayenne; cook for 2 minutes.
  8. Remove from heat, add lime juice and cilantro, and stir gently.
  9. Assemble the bowls starting with roasted cauliflower and topping with the beef mixture.
