For the Parmesan Herb Butter
  • 1/2 cup Unsalted Butter For herb drizzle

  • 1/4 cup Fresh Parsley, chopped
  • 1 tablespoon Fresh Rosemary, chopped
  • 1 tablespoon Fresh Thyme, chopped

Preparation Steps

  3. Spread the sweet potato cubes onto the prepared baking sheet in a single layer.

  5. While baking, melt unsalted butter in a small saucepan and add fresh herbs. Stir until fragrant.
  6. Remove baked sweet potatoes and sprinkle with grated Parmesan cheese.
  7. Drizzle the herb butter over the sweet potato bites and toss gently.
