Preparation Steps
  1. Preheat the oven to 450°F (232°C).
  2. Cook ground beef in a skillet over medium-high heat for 5-7 minutes until browned. Add taco seasoning and enchilada sauce, simmer for 2-3 minutes.
  3. Wrap corn tortillas in damp paper towels and microwave for 30-60 seconds to make pliable.
  4. Brush one side of each tortilla with olive oil, place oiled-side down on a baking sheet.
  5. Fill tortillas with a layer of cheese, seasoned beef filling, and another sprinkle of cheese, then fold over.
  6. Bake the filled tacos for 16 minutes until golden brown and crispy.
  7. Allow to cool for about 3 minutes on the baking sheet before serving.
