Preparation Steps

- Cook ground beef in a skillet over medium-high heat for 5-7 minutes until browned. Add taco seasoning and enchilada sauce, simmer for 2-3 minutes.
- Wrap corn tortillas in damp paper towels and microwave for 30-60 seconds to make pliable.
- Brush one side of each tortilla with olive oil, place oiled-side down on a baking sheet.
- Fill tortillas with a layer of cheese, seasoned beef filling, and another sprinkle of cheese, then fold over.
- Bake the filled tacos for 16 minutes until golden brown and crispy.
