- Prep the cod fillets by rinsing them under cold water and patting them dry with paper towels. Season both sides with salt and pepper.
- Make the coating by mixing panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, paprika, and additional salt and pepper in a bowl.
- Prepare the sauce by whisking together mayonnaise, Dijon mustard, and lemon juice in a separate bowl until smooth.
- Coat each fillet with the mayo mixture, then press them into the breadcrumb mixture for a thick layer.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Lightly spray the air fryer basket with cooking spray, arrange the coated fillets in a single layer and air fry for 10-12 minutes.
- Check the internal temperature of the cod; it should reach 145°F (63°C). If not, continue air frying in increments.
- Garnish with freshly chopped parsley and serve immediately with your favorite sides.
