For the Garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C/350°F.
  2. In a baking dish, combine ripe mixed cherry tomatoes, sliced garlic, fresh thyme, and 3 tablespoons of olive oil. Optionally, add balsamic vinegar and season with salt and pepper.
  3. Place the baking dish in the oven and roast for 30 minutes until tomatoes are blistered and juicy.
  4. In a food processor, combine 200 grams of feta, ¼ cup plus 2 tablespoons of cream cheese, and lemon zest. Add 2 tablespoons of olive oil and blend until smooth.
  5. Spread the whipped feta on a serving plate and top with roasted tomatoes, including the juices. Drizzle honey on top.
  6. Garnish with fresh basil leaves and serve immediately with grilled ciabatta bread.
