Cooking Steps
- Pat salmon fillets dry and season with paprika, salt, and pepper. Heat oil in a skillet and sear skin-side down for 3-4 minutes. Flip and cook for an additional 2-3 minutes, then set aside.
- In the same skillet, add chopped onion and sauté for 2-3 minutes. Add minced garlic and Italian seasoning, cooking for 30-60 seconds until fragrant.
- Add uncooked orzo and toast it for 1 minute. Pour in chicken stock and bring to a boil. Reduce heat, cover, and simmer for 6-10 minutes until tender.
- Stir in heavy cream, roasted bell peppers, and Parmesan cheese. Mix in spinach and lemon juice, cooking until spinach wilts.
- Return seared salmon to the skillet, spooning orzo over it. Cook for 1-2 minutes to meld flavors. Serve warm.
