Cooking Steps
  1. Pat salmon fillets dry and season with paprika, salt, and pepper. Heat oil in a skillet and sear skin-side down for 3-4 minutes. Flip and cook for an additional 2-3 minutes, then set aside.
  2. In the same skillet, add chopped onion and sauté for 2-3 minutes. Add minced garlic and Italian seasoning, cooking for 30-60 seconds until fragrant.
  3. Add uncooked orzo and toast it for 1 minute. Pour in chicken stock and bring to a boil. Reduce heat, cover, and simmer for 6-10 minutes until tender.
  4. Stir in heavy cream, roasted bell peppers, and Parmesan cheese. Mix in spinach and lemon juice, cooking until spinach wilts.
  5. Return seared salmon to the skillet, spooning orzo over it. Cook for 1-2 minutes to meld flavors. Serve warm.
