Ingredients
  

  • 1 lb Gnocchi Fresh or frozen gnocchi
  • 1 cup Pumpkin Puree Canned puree is convenient
  • 10 leaves Sage Leaves Fresh sage enhances flavor
  • 1 cup Heavy Cream Or use half-and-half or coconut cream
  • 1/2 cup Parmesan Cheese Or swap with nutritional yeast for dairy-free
  • 2 cloves Garlic Fresh, minced for flavor
  • 1 pinch Nutmeg Enhances autumn flavor
  • to taste Salt & Pepper Essential for seasoning
  • 1/4 cup Pine Nuts Toasted walnuts can also be used

Method
 

  1. Prepare the Gnocchi: Boil salted water, add gnocchi until they float (2-3 minutes), then set aside.
  2. Sauté Garlic and Sage: Heat olive oil in a skillet, add minced garlic and sage for 1-2 minutes.
  3. Create the Creamy Sauce: Reduce heat, stir in heavy cream, simmer for 3-4 minutes, then add pumpkin puree.
  4. Season the Sauce: Add nutmeg, salt, and pepper, and cook for another 2-3 minutes.
  5. Combine Gnocchi and Sauce: Toss in the gnocchi, warm for 2-3 minutes.
  6. Finish with Cheese and Nuts: Stir in Parmesan until melted and add toasted pine nuts.
  7. Serve and Garnish: Transfer to a serving dish or bowls, garnish with sage and extra Parmesan.
