Step-by-Step Instructions
  1. In a large pan, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add one finely chopped yellow onion and three minced garlic cloves. Sauté for about 5 minutes until the onion is soft and translucent, and the garlic is fragrant.
  2. Next, stir in a half cup of chopped sun-dried tomatoes, 2 tablespoons of tomato paste, 1 teaspoon of Italian seasoning, and a pinch of red chili flakes and salt. Sauté this flavorful mix for another 3 minutes.
  3. Pour in 1 cup of vegetable broth and 1 cup of coconut milk, stirring well to create a creamy sauce. Allow the mixture to simmer for about 2 minutes.
  4. Drain and rinse two cans of chickpeas, then add them to the pan, stirring to coat them evenly in the sauce. Cover the pan and let the chickpeas heat through for an additional 2 to 3 minutes.
  5. Finally, stir in a couple of handfuls of fresh spinach or basil until wilted, which should take about 1 minute.
