  1. Heat 2 tablespoons of olive oil in a medium-sized skillet over medium heat. Once the oil shimmers, add 2 minced garlic cloves and sauté for 1-2 minutes until fragrant.
  2. In a blender, combine 1 cup of cottage cheese, ½ cup of almond milk, and ¼ cup of optional grated Parmesan cheese. Add 1 tablespoon of cornstarch, 1 teaspoon of Italian seasoning, and a pinch of salt and pepper. Blend until smooth.
