  • 1 can Coconut Milk full-fat or light
  • 4 cups Fish or Chicken Broth or vegetable broth
  • 2 tbsp Lime Juice freshly squeezed
  • 1 tbsp Fish Sauce or soy sauce/tamari
  • 1 tbsp Sugar or honey/agave syrup
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Fresh Cilantro chopped
  • 1 whole Lime Wedges for garnish

Method
 

Step-by-Step Instructions
  1. In a large pot, drizzle olive oil and heat over medium heat until it shimmers, about 2 minutes.
  2. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic and grated ginger, cooking for 1 minute.
  4. Add the diced red bell pepper and cook for an additional 3-4 minutes.
  5. Pour in the coconut milk and broth, increase heat to simmer for about 5 minutes.
  6. Stir in lime juice, fish sauce, and sugar. Let simmer for 2-3 minutes.
  7. Taste and adjust seasoning with salt and pepper.
  8. Gently add fish fillets, cover the pot, and cook for 5-7 minutes until opaque.
  9. Stir in fresh cilantro and remove from heat. Let sit for a minute.
  10. Ladle soup into bowls and garnish with lime wedges before serving.
