  • 2 pieces Boneless, Skinless Chicken Breasts substitute with thighs for juicier result
  • 2 tablespoons Olive Oil or avocado oil for higher smoke point
  • 3 cloves Garlic, Minced fresh garlic recommended
  • 1 teaspoon Italian Seasoning or alternative mix of dried herbs
  • to taste Salt and Black Pepper
For the Veggies
  • 4 cups Fresh Spinach can use frozen, squeeze out moisture
For the Creamy Mixture
  • 8 ounces Cream Cheese full-fat suggested
  • 2 cups Shredded Mozzarella Cheese substitute with provolone if desired
  • 1/4 cup Parmesan Cheese optional, can omit

Method
 

Casserole Preparation
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil or cooking spray.
  2. Slice the boneless, skinless chicken breasts in half horizontally for even thickness and pound if necessary.
  3. Whisk together olive oil, minced garlic, Italian seasoning, salt, and pepper in a bowl. Marinate the chicken for 15-30 minutes.
  4. Sauté the spinach in a skillet over medium heat for 2-3 minutes until wilted, then remove from heat.
  5. Beat the softened cream cheese until smooth, then fold in sautéed spinach and half of the mozzarella cheese.
  6. Optionally, sear the marinated chicken in a hot skillet for 2-3 minutes on each side for extra flavor.
  7. Arrange the chicken in the baking dish, spread the creamy mixture over the chicken, and sprinkle remaining mozzarella on top.
  8. Bake the casserole for 20-30 minutes until chicken reaches 165°F (75°C) and cheese is melted and golden.
  9. Let the casserole rest for 5 minutes before serving.
