- Step 1: Cook the Pasta - Bring a large pot of salted water to a rolling boil, add penne pasta, cook until al dente, reserve ½ cup water, then drain.
- Step 2: Prepare the Chicken - Toss chicken with Cajun seasoning, salt, and pepper, heat oil in skillet, cook chicken 5-6 minutes until golden, then remove.
- Step 3: Sauté the Vegetables - In the same skillet, melt butter, add onion, garlic, and red bell pepper, sauté until soft and fragrant, about 2-3 minutes.
- Step 4: Make the Sauce - Pour white wine to deglaze, simmer for 2 minutes, then add cream and Parmesan, stirring until thickened, about 2-3 minutes.
- Step 5: Combine Ingredients - Return pasta and chicken to skillet, toss to combine and adjust sauce thickness with reserved pasta water as needed.
- Step 6: Serve - Remove from heat, serve garnished with parsley and extra Parmesan if desired.
