  • 8 oz Penne Pasta Substitute with any favorite pasta shape.
For the Chicken
  • 2 chicken breasts Chicken Breasts Can use pre-cooked rotisserie chicken.
For Flavoring
  • 2 tbsp Cajun Seasoning Adjust for desired spice level.
  • 1 tsp Salt
  • 1 tsp Black Pepper
For Cooking
  • 2 tbsp Butter Adds richness when sautéing.
  • 1 tbsp Cooking Oil Use olive or vegetable oil.
For the Vegetables
  • 1 medium Onion Chopped.
  • 2 cloves Garlic Minced.
  • 1 medium Red Bell Pepper Diced.
For the Sauce
  • 1/2 cup White Wine Can substitute with chicken broth.
  • 1 cup Double Cream (Heavy Cream)
  • 1/2 cup Grated Parmesan Substitute with Pecorino Romano if needed.
For Garnish
  • 2 tbsp Fresh Parsley Chopped.

Method
 

Cooking Instructions
  1. Step 1: Cook the Pasta - Bring a large pot of salted water to a rolling boil, add penne pasta, cook until al dente, reserve ½ cup water, then drain.
  2. Step 2: Prepare the Chicken - Toss chicken with Cajun seasoning, salt, and pepper, heat oil in skillet, cook chicken 5-6 minutes until golden, then remove.
  3. Step 3: Sauté the Vegetables - In the same skillet, melt butter, add onion, garlic, and red bell pepper, sauté until soft and fragrant, about 2-3 minutes.
  4. Step 4: Make the Sauce - Pour white wine to deglaze, simmer for 2 minutes, then add cream and Parmesan, stirring until thickened, about 2-3 minutes.
  5. Step 5: Combine Ingredients - Return pasta and chicken to skillet, toss to combine and adjust sauce thickness with reserved pasta water as needed.
  6. Step 6: Serve - Remove from heat, serve garnished with parsley and extra Parmesan if desired.
