- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine 2 cups of oats with ½ cup of cocoa powder. Stir thoroughly until well blended.
- Create a well in the dry mixture and pour in ½ cup of honey and 1 egg. Stir until combined and smooth.
- Scoop out portions of the cookie dough on the prepared baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes, checking for edges setting and centers remaining slightly soft.
