Step-by-Step Instructions
  1. Boil a large pot of salted water. Add linguini and cook for 8-10 minutes. Reserve 1 cup of pasta water, then drain.
  2. In a blender, combine avocados, egg yolks, kale, garlic, olive oil, lemon juice, salt, paprika, and cayenne. Blend until smooth.
  3. With the blender running, gradually add reserved pasta water until desired consistency is reached.
  4. Toss drained pasta with the avocado sauce in a pot over low heat until well coated.
  5. Fold in cooked bacon and Parmesan cheese. Serve immediately, garnished with extra cheese and pepper.
