Ingredients
  

For the Base
  • 2 tablespoons Olive Oil
  • 1 medium Yellow Onion chopped
  • 3 cloves Garlic minced
For the Chili
  • 1 pound Ground Turkey can substitute with ground chicken or beef
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1/4 teaspoon Cayenne Pepper optional
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Ground Cinnamon
  • to taste Salt
  • to taste Pepper
For the Heartiness
  • 1 cup Pumpkin Puree ensure it's pure pumpkin puree, not pie filling
  • 1 can Great Northern Beans
  • 1 can Diced Tomatoes with their juices
  • 4 cups Chicken Broth can use vegetable broth for vegetarian version
  • 1 cup Frozen Corn can use fresh corn if available
For Toppings
  • 1/4 cup Fresh Cilantro for garnish
  • to taste Sour Cream or Greek Yogurt optional
  • to taste Shredded Cheddar Cheese optional
  • 4 wedges Lime optional, to serve on the side

Cooking Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped yellow onion and sauté for 5–7 minutes until softened and translucent. Stir in 3 minced garlic cloves and cook for an additional minute until fragrant.
  2. Add 1 pound of ground turkey to the pot, breaking it apart with a wooden spoon. Cook for about 7–10 minutes until browned and cooked through. Drain excess grease.
  3. Sprinkle in 1 tablespoon of chili powder, 1 teaspoon of cumin, and 1 teaspoon of smoked paprika. Stir for about a minute to coat the turkey in spices.
  4. Incorporate 1 cup of pumpkin puree, 1 can of great northern beans, 1 can of diced tomatoes, and 4 cups of chicken broth. Bring to a gentle simmer.
  5. Reduce heat to low, cover, and let simmer for 30–60 minutes, stirring occasionally.
  6. About 10 minutes before serving, stir in 1 cup of frozen corn. Heat through.
  7. Taste and adjust seasoning with salt and pepper. Serve garnished with fresh cilantro.
