Cooking Steps
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped yellow onion and sauté for 5–7 minutes until softened and translucent. Stir in 3 minced garlic cloves and cook for an additional minute until fragrant.
- Add 1 pound of ground turkey to the pot, breaking it apart with a wooden spoon. Cook for about 7–10 minutes until browned and cooked through. Drain excess grease.
- Sprinkle in 1 tablespoon of chili powder, 1 teaspoon of cumin, and 1 teaspoon of smoked paprika. Stir for about a minute to coat the turkey in spices.
- Incorporate 1 cup of pumpkin puree, 1 can of great northern beans, 1 can of diced tomatoes, and 4 cups of chicken broth. Bring to a gentle simmer.
- Reduce heat to low, cover, and let simmer for 30–60 minutes, stirring occasionally.
- About 10 minutes before serving, stir in 1 cup of frozen corn. Heat through.
- Taste and adjust seasoning with salt and pepper. Serve garnished with fresh cilantro.
