  • 1 tablespoon butter
  • 2 tablespoons flour for thickening the gravy

  • 2 pounds potatoes preferably Yukon Gold
  • ½ cup milk for creaminess
  • ½ cup sour cream for tang and richness
  • 1 cup cheddar cheese shredded, sharp preferred

Step-by-Step Instructions
  1. Preheat oven to 375°F (190°C). In a skillet, heat olive oil and butter over medium-high heat.
  2. Season top sirloin with salt and pepper and sear in the hot skillet for 6-8 minutes until browned.
  3. Remove beef, add diced onion and chopped carrots, and sauté for 4-5 minutes until translucent.
  4. Sprinkle flour over vegetables, stir for 1-2 minutes, then pour in apple cider and beef broth. Bring to a boil.
  5. Transfer mixture to an oven-safe dish, cover, and bake for 60-90 minutes until beef is fork-tender.
  6. Peel and chop potatoes, boil for 20-25 minutes until fork-tender, then mash with milk, sour cream, and cheddar.
  7. Serve creamy mashed potatoes topped with the stew and garnish with fresh chives.
