- Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your baking dish by greasing it lightly.
- In a medium skillet, melt 3 tablespoons of unsalted butter. Add peeled and chopped pears, 3/4 cup granulated sugar, 1/4 cup all-purpose flour, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt. Cook for about 3 minutes until bubbly, then stir in 1/2 teaspoon vanilla extract.
- In a large bowl, whisk together 1 1/2 cups all-purpose flour, 1/2 cup light brown sugar, 1 teaspoon baking powder, and remaining spices: 1 teaspoon cinnamon, 1/2 teaspoon ground cardamom, 1/4 teaspoon ground ginger, 1/4 teaspoon ground allspice, and 1/8 teaspoon ground nutmeg. Cut in 3 tablespoons of cold butter until mixture resembles coarse crumbs.
- Gradually add 1/4 cup milk to flour mixture, blending gently until a soft dough forms. Drop spoonfuls of this topping over the warm pear filling.
- Sprinkle the top with sanding sugar if desired. Bake in the preheated oven for 30-35 minutes until topping is golden and filling bubbles.
- Allow to cool for 10-15 minutes. Serve with a scoop of vanilla ice cream if desired.
