Step-by-Step Instructions

  4. Gently fold in 1 cup of cottage cheese, 1 cup of shredded Colby Jack cheese, and bacon bits into the egg mixture.
  5. Spoon the mixture evenly into the muffin cups, filling them about three-quarters full.
  6. Place a shallow pan filled with hot water on the lower rack of your preheated oven.
  7. Bake the egg bites for 23-25 minutes until the edges are set and the centers are slightly jiggly.
